Lemon Garlic Roast Chicken

Ingredients:

  • 1 whole chicken (about 4-5 pounds)
  • 4 cloves of garlic, minced
  • 1 lemon, zested and juiced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 375°F (190°C).
  2. Prepare the Chicken:

    • Pat the chicken dry with paper towels.
    • Season the chicken, inside and out, with salt and pepper.
  3. Make the Marinade:

    • In a small bowl, mix together minced garlic, lemon zest, lemon juice, olive oil, oregano, thyme, paprika, salt, and pepper to form a paste.
  4. Marinate the Chicken:

    • Rub the chicken with the prepared marinade, making sure to coat it evenly. You can also gently lift the skin and rub some marinade underneath for added flavor.
  5. Truss the Chicken (Optional):

    • If you prefer, you can truss the chicken to help it cook evenly. Use kitchen twine to tie the legs together.
  6. Roast in the Oven:

    • Place the chicken on a roasting pan or oven-safe dish and roast it in the preheated oven for approximately 1.5 to 2 hours or until the internal temperature reaches 165°F (74°C). Cooking times may vary based on the size of your chicken.
  7. Baste the Chicken (Optional):

    • If desired, baste the chicken with its juices every 30 minutes for a juicier and more flavorful result.
  8. Rest and Serve:

    • Once the chicken is cooked, let it rest for about 10-15 minutes before carving. This allows the juices to redistribute, keeping the chicken moist.
  9. Garnish and Serve:

    • Garnish with freshly chopped parsley before serving.
